Paddock to Plate with Australian Sweet Potatoes
It has been an absolute blast these past 12 months hanging out with my Australian Sweet Potatoes family as their ambassador. We explored so many wonderful and delicious recipes this super food vegetable can do and enjoyed all the lovely events I attended especially this Paddock to Plate visit!
I also had the opportunity to visit our local Cudgen Sweet Potato farmers Matt and Jane, thanks for opening up your kitchen and sharing your family salad with us!
Jane Prichard’s Sweet Potato Salad
2 cups Whole grain penne pasta - cooked and drained.
1kg peeled, cubed roasted sweet potato. Toss the sweet potato in olive oil, Moroccan seasoning and maple syrup before roasting.
2 tablespoons of pesto (make my 2 minute pesto)
2 tablespoons chopped Italian parsley
Good handful of poppy seeds
Good handful of sesame seeds
Good handful of linseeds
3 tablespoons pine nuts
500g baby spinach
Purple cabbage or any leafy greens
Meredith ash dusted goats cheese - crumbed over the top of the salad
Assemble all ingredients on a plate 😊
Whole grain mustard
Jane recommends adding ingredients to taste to your liking. Add to a jar and shake like crazy!
Pour over the salad, and enjoy!
