It's just another manic Monday I wish it was Sunday 'Cause that's my funday My I don't have to runday It's just another manic Monday...........
I don't know if I want it to be Sunday as our weekend was off the hook! So much chaos, mess around our home, sorting out some kind of plan for our BIG move. We have set a date 7th April 2015. That's like 5 weeks away WHOOSH! So here's the status of our place completed and things yet to be done;
1. Painting done! Took 6 years but we did it!
2. New stairs beside on our new pool and deck area.
3. New stone kitchen bench-top, mirror splashback with new appliances.
4. Sort out clothes and linen and pack in labelled boxes
5. High pressure deck areas.
6. Steam clean carpets.
7. Wash windows.
8. Get various quotes for odd little jobs Adrian won't get time to do.
9. Arrange storage venue & prep home for Real Estate pictures.
10. Try and remain cool calm and collected during this stressful time.
It's a start right? It's only been a few days since Adrian was offered the position so we are still pinching ourselves with this dream lifestyle living by the coastline up in Queensland or Northern NSW. We have no clue? We don't know where we are going to live, what schools the kids are going to so we are taking each day as it comes. Any tips, please leave your comments below.
Over the weekend it was pretty intense moving all the furniture around and of course running around our little kids. So I made sure I went for a walk after all the hectic tasks. Even if they were for 5-10 minutes. I just need to clear my head as SO much is going on at the moment that I have to take this all in and just learn to switch off and not panic WE ARE MOVING 6 HUMANS AND OUR LIVES INTERSTATE IN 36 DAYS!!! ha ha

As promised here are the chicken burgers I made last week that everyone wanted the recipe. Now you all know I just use whatever ingredients I have left in our pantry so I will try and go as close to measurements for you. Otherwise a real bad habit of mine is a little bit of this and a little bit of that!
Chicken burgers with Lupin Flakes and Haloumi Cheese Salad
Mince chicken or turkey (I used x2 500gm $10)
Handful of chopped herbs (I had parsley and tarragon in the garden)
1 TBS Lupin flakes (or you can use traditional bread crumbs)
1 TSP Chia seeds
Combine all ingredients, roll into balls (I refrigerate for an hour or so then press down on the BBQ into burger shapes) and serve with your favourite salad. I had some rocket, sprouted beans and grilled haloumi. YUMMO!
Grill haloumi pieces until golden brown, scatter over some rocket and sprouted beans, squeeze lemon juice and olive oil BOOM!
I have just discovered lupin flakes which is an awesome alternative than bread crumbs as they are legumes and full of protein! These chicken burgers are also fabulous for the kids lunches. I make a big batch so they have some the next day with some bean sprout shoots and cheese. They love it!
