A Monday Meal Planner with a Special Valentine's Day Treat!
Hi Everyone... how was your weekend? Kids definitely should be settled back into school by now (fingers crossed) and us wonderful mums back into our routine! Hope the transition has been smooth and of course FUN for you! The NO ADDED SUGAR challenge is in full swing now and I can't wait to see how you go! I have incorporated some scrumptious sugar free snacks for you to enjoy leading up to Valentine’s Day.
Breakfast Blueberry Buckwheat Pancakes
1/2 cup flour (I used half oat & buckwheat)
1/2 banana sliced
1/2 Tbsp psyllium powder
1 heaped tsp Maca powder @powersuperfoods
3/4 cup almond milk unsweetened @almondbreezeaus
1 Tbsp granulated stevia @natvianaturalsweetener (or natural sweetener of choice)
1/2 tsp bicarbonate soda
1/2 tsp apple cider vinegar
1/2 tsp vanilla extract
Blend in a blender until smooth
Cook in some coconut oil @biomedicalsaus
Add some fresh blueberries to each pancake whilst cooking
Almond chia sauce is just @mayversfood Almond & Chia spread thinned out with boiling water
